Freeze-dried fruits are produced by lyophilizing fresh fruits in order to remove moisture. This procedure is known as food preservation. This complex process involves freezing the fruits at extremely low temperatures, then removing the ice crystals that develop during freezing without allowing the fruits to become liquid by placing them in a vacuum atmosphere.
